We came back to this place after a long time. The ambience is still great inside with clean benches and high rise tables to suit your seating mood. The order was taken promptly and our request for customization on the pizza base to add chili flakes was promptly fulfilled without any hesitation. The toppings and then the request for it to be well-done was also perfectly followed through. The pizza was delicious and we got a soda (Reg Coke) and a Velvet Cookie both tasted great. Staff was very responsive and customer oriented. Will definitely come again and recommend.

Friendly and well setup pizza place. They serve the most guilt free and guilt laden pizzas of your choice with a calorie counter to each. They also provide keto option, vegan options and vegetarian options in addition to the usual meat options. They have a wood fire oven that really gives that authenticity to the taste. Whats more you get to choose your base, your sauce, your cheese and your toppings. And its not a dent on the pocket as much

Well this is going to be just a poor experience because my daughters love pizza but this pizza I would rate under little Caesars yes the pizza was not only small but the crust was uneven either breakable or burnt the sauce different taste to thick the cheese was not melted fully and the pizza was smaller than usual but the service was great and easy to pick up and the place seem to be clean but went for the pizza and would not go back

We have been to this location several times and the quality is great, the service always friendly, and today with the extra precautions they have really done well with the added safety. I love the gluten free & dairy free options and the overall variety they offer! I am grateful they are open so I didnt have to cook again today!

Came here on a saturday night and place was a bit busy but well worth the short wait. Pizza was crisp and for 8.99 you get unlimited toppings. I added cilantro and pesto on my choice and it was a good decision. Overall good experience and will try again.

Best gluten free pizza I’ve had anywhere. Quality cheeses and ingredients with artisan quality crusts. Beautiful pizza oven visible in store with a unique branding in the fire area, see photo below. I only tried the gluten free crust, but the sights and smells in their pizzeria leave me fairly confident the conventional crusts are absolutely amazing as well

First time here. The guy taking our order asked us 3 times what we wanted. I hate repeating myself. Then another lady shows up and asks us what were getting..then another one shows up like whats going on here. The amount of toppings they give you is limited..meaning sprinkle. The pizza was good but Id recommend adding a little more topping amounts for the price

This place has gone downhill a lot. This was the first customized pizza place I went to years ago. They made a great pizza and the workers moved. They moved with purpose and had a smile on their face. Youd be lucky now if you see more than one person working and very slowly. Poor service. And quality has declined.

Its been a year since last visit, Location is good, great people but today 3/7/2023, what happen to ingredients?? The dough?? Lower quality products. Tasted awful. Not good. Tastes like dominos. Pieology is the only pizzaria with a true ketogenic dough. All the others suck. The workers are great, the pizza is top notch. I eat here all the time. I go to morgan hill san leandro stockton. Pieology is the best place. Ive had the best pizza both sfc and nyc have to offer and pieology is still better!

This is subway for pizzas where diners can make their own pizzas by picking the crust and toppings. This place doesnt stinge on toppings - theres different kinds of cheeses and even vegetarian proteins. Made fresh in a gas fired oven. Very affordable, and hot pizzas are always yummy.

Great place to make your own pie! This time I tried cauliflower crust and it was very good and very thin. Only problem is you got to eat it fast or it will get a little soggy. Might have been I had too much cheese on mine, though!

What a stingy attitude towards adding toppings...I had to ask 10 times to please add more add more...coz I could just count the pieces of onions or mushrooms by just looking at it. despite asking for more, my family was shocked to see how the pizza looked without much toppings.Even for the sauce, guy was really trying to finish spread one scoop of the sauce, that too did not go all the way to borders. oh man......My request to the store: please dont be stingy on toppings, unless you want us to stop coming to your place.

Great pizza for a quick lunch. They have several crust options including a glutton free and a cauliflower option which the Mrs enjoys and says taste very much like regular crust. You pick your sauce, veggies, meats and then they cook it in their oven in just a few minutes.

Tried the Deep Dish for the time. A little disappointed that this particular pizza doesnt start with fresh dough like the other ones. Also, they put the sauce over the cheese and your only allowed 6 toppings. This was $2 more but its just not delicious like the fresh ones.

Pieology feels like you walked into Chipotle but they give you pizza, instead of burritos. You get three options of crust, flour, wheat, or gluten free. Then you can pick your own sauce, cheese, and toppings. It takes maybe 5 - 10 minutes for them to bake your pizza. I was shocked at how good the pizza was. The crust is very thin, thinner than New York style, but it was delicious. I will absolutely be going back.

My first visit to any pieology places. The server behind the counter was obviously new. And acted the part. He created an great couple of pizzas for us. Loved the inspirational quote wall. ...however the area behind the counter was a mess, there was trash on the floor and I watched staff members dispose of thing by simply dropping them on the floor an kicking them out of the way. All other parts of the shop seemed clean enough, but the previous behavior, did give me cause to doubt. The food was fantastic. We would definitely try pieology again, but maybe a different location.

Interesting concept. The pizzaria is laid out similar to a Chipotles or Subway. You choose your crust first from thin, thick, rising or cauliflower. There is only one size. It serves 2-3 people. If you choose anything other than thin crust there is an up charge between 1.50 and 2.50. They press the crust as you watch. Then choose your sauce from house red, garlic butter, etc.Next you choose your cheese from six kinds or a combination or vegan. Then you move down the line to select your toppings. If you choose only one topping the pizza is $6.50. if you go with unlimited toppings the price is $8.50. First comes a wide selection of veggies and herbs, such as sun dried tomatoes, mushrooms, several kinds of people, fresh basil, spinach, etc., All the typical toppings. Finally there is an extensive meat counter to choose from, again with all of the typical toppings and some very unusual ones. Your pizza then goes into a flaming brick oven. You select your drink and pay. They offer paper plates, parmesan cheese and hot peppers.The process sounds long but it goes very fast. The pizza is ready before you have time to sit down. You can eat in the cozy dining room or take out. It was a fun experience. I went there because its one of only two pizzarias in the area to offer vegan pizza. Be advised that all their crusts are vegan except the cauliflower crust.The pizza was delicious and the thin crust was crispy. The flaming oven really added to the flavor .The wait staff was friendly, pleasant, helpful and patient. It seemed clean and well organized. I paid a total of 9.89 including tax for a fully loaded vegan pizza.If this review was helpful, please like!

My daughter and myself were in Gilroy on 7-22-18 went to have dinner at Pieology the pizza was great, but the lobby was filthy. I was shocked to see an eatery like that. There were plenty of employees there that evening to have it very clean. The problem was that there were 2 guys chilling and chatting with some of the girls. Thats a business not a place for distracting employees time to work. I even took a video of the lobby.

Had the best experience in this pieology. The atmosphere when I came in was inviting, I was greeted by Lizzie who is an amazing associate. She even went above and beyond and delivered my pizza and me asked me if I wanted any pepper or parmesan and I felt she didnt have to do that but she did anyways. Lizzie was so nice I honestly will be going back a lot more often!

On Thursday at 7:30pm a friend took me for dinner as a birthday gift.. By request for my favorite pizza I was so very disappointed when the employees including the manger began horsing around and throwing pieces of food at each other. I was going to bring it to the mangers attention but he was playing along... they really need to hirer an older adult to keep and eye out on this employees . So disappointed!😩

We have been to other Pieology locations and have been pleased with the quality of the pizza. however, at the Gilroy location this evening 08/15/17 we were very disappointed. My husbands pizza was burnt across the entire bottom so much so that he had to remove the topping and peel the burnt bread away from the bottom. To make matters worse, he took the pizza to the cashier after finishing the topping and showed him all the burnt bread and the amount that had to be pulled off. He told the cashier that they need to check the temperature and /or the cook time of their pizzas. The cashier said he would check it but then without an apology he shrugged his shoulders and walk to the back room. Needless to say, we wont be back to the Gilroy, CA Pieology location again.

Today Saturday 9/24/22 at 9:30 pm I stopped by for a pizza and very bad service there were 2 chubby girls and both of them were in a bad temper that in fact one of them said a bad word because at the last minute I asked for one more ingredient, 👎👎👎👎said the word (b,ch)
